Ja'Trel Poitier Dixon is our contributor sharing her beloved family recipe for her scrumptious,"Sweet Potato Pie" A favorite dish within our Smith/Herring/Stewart Family made by Othelia Smith Herring (Grandmother) to Esther Herring Poitier (Mother) and shared to Ja'Trel. Another wonderful tradition enjoyed within our family.

"Ja'Trel's Sweet Potato Pie"
Ingredients:
• 3 Tablespoons all purpose flour
• 1 Cup of sugar
• 2/3 Cup dark brown sugar
• ¼ Teaspoon ground nutmeg
• Pinch salt
• 1 Cup mashed sweet potato
• 2 eggs
• ¼ Cup light corn syrup
• ½ Cup butter, softened
• ¾ Cup evaporated milk
• Cinnamon
• 1 unbaked pastry pie shell
• Dash of vanilla extract

Directions
1. Preheat oven to 350 degrees
2. Lightly flour both sides of pastry shell and place in pan. Place the empty shell into the oven and bake until lightly brown.
3. In a small bowl, combine flour, sugar, nutmeg, salt, nutmeg, eggs, light corn syrup, butter, cinnamon, mashed sweet potato, and evaporated milk into bowl.
4. Beat mixture and pour into pastry shell

5. Bake at 350 for 55-60 minutes
(After first 15-20 mins, cover edges for pie with aluminum foil)
6. Cool for 1 hour
