Mom’s (Othelia Smith Herring's) Beef and Potato Stew
INGREDIENTS
5 lbs white potatoes (peeled & cut into cubes)
1 onion
1 lb ground beef
Boil potatoes until semi-soft
(sliced carrots, optional)
1 can Campbell’s golden mushroom soup or brown gravy mix
Salt and pepper to taste

COOKING INSTRUCTIONS
Place 1 lb ground beef in a frying pan
Boil potatoes until semi-soft
Pour beef over the potatoes then
Mix soup over the beef and potatoes place in a baking dish
Bake for 20-30 minutes at 350 degrees

COOKING TIPS: You can always increase the number of ingredients for larger groups. Be sure to save some for later because the casserole tastes EVEN Better the next day. (smile)
